Grocery Store Bakery…Fresh or Frozen?

While this topic might be controversial for some…I have worked on both sides of the coin so I have insider knowledge so -to-speak regarding the topic. As a bride myself, and a scratch baker, it was important to me when seeking out my own wedding cake baker that I select someone who shares the same morals and passions as I.

Understanding the difference between processed and the true definition of what a fresh cake entails is important to me.

Let's be frank and logical for a minute…do you actually believe that a grocery store that is open a total of maybe 18 hours ( 6:30 am to 11 pm) actually has the staff and capacity to bake fresh breads, rolls, bundt cakes, pies, and then all of the flavors of cake you decide you want to buy that are in the frozen case? I think not! Most of this comes pre-frozen on a truck and is basically thaw and serve merchandise.. Even the cake you see the cake decorators icing in the window comes out of a frozen box, plastic wrapped and ready for service. Due to capacity, most grocery store cakes are pre-made in bulk with cost saving ingredients ( think margarine instead of sweet cream butter) as opposed to premium *( the stores have to make a profit somehow). This helps mass produce greater amounts of product for all potential customers while still remaining cost effective for both the supermarket and the customer. This is not to say that the cake is not delicious …just to state the differences.

However, one bite and you will notice the difference.

Living here in Florida, I have worked at a few grocery bakeries which shall not be named, so I know the logistics.  There is one particular store that comes to mind that Floridians place on a pedestal in regards to taste and service. They actually praise these cakes in an almost cult-like way for superior taste and freshness which is interesting to me because I know that these cakes are still , like many other large chains, made in an outsourced factory. 

So what does this have to do with us? We are on the other side of the coin. Nothing is mass produced or taken out of the freezer…nothing is scooped out of a tub or bucket, and there are no preservatives, or items you can’t name in our ingredients. WHen we say its baked fresh and customized just for you, we mean it. Every filling, spread, frosting, and cake is made entirely with a passion for excellence and superiority, with you in mind of course.  There will never be a duplicate of your cake because its YOUR cake…and yes it will cost more, but you have to pay the cost to be the boss.
